8 slices of bacon, trimmed
3 cups of sweet potato, peeled & grated
3 capsicums, diced
3 jalapenos, seeds removed & finely diced
1 ½ cups cheese, grated
12 medium eggs
1 cup milk
½ teaspoon chilli powder
1 teaspoon ground cumin
Salt & pepper taste
Oil spray – coconut / olive
Pre-heat oven to 200 degrees. Spray a large casserole dish with oil & set aside. Cook bacon in a pan & allow to cool slightly, then chop into pieces. Beat the eggs, then stir in the milk, salt, pepper & spices. Add he bacon, vegetables & one cup of cheese to the casserole dish, then pour the egg mix over the top. Stir everything up & sprinkle the remaining cheese over the top. At this point, you can cover & refrigerate overnight, or bake immediately. Bake for 45-60 minutes, you want the centre to no longer jiggle& have risen slightly. Double check that it is cooked in the centre by inserting a knife. Allow the casserole to sit for 10 minutes before serving.
