4 chicken thigh fillets, skin off
1 ½ tablespoons lemon pepper seasoning
2 tablespoons butter
½ cup chicken broth
1 garlic clove, minced
1 lemon, juiced
Preheat oven to 190 degrees. Prepare a baking try with baking paper. Season the chicken thighs with lemon pepper seasoning. Bake chicken on baking tray for 15-20 minutes or until cooked through. Cook under the grill for the last few minutes to get a crisp top on the fillet. Heat a medium pan over medium-high heat & add the butter. Whisk the butter for a few minutes until the butter starts to become frothy & brown. Add in the chicken broth, garlic & lemon juice. Add the chicken thighs to the pan & coat with the sauce. Simmer for a couple of minutes before serving.
