INGREDIENTS FOR MARINADE
2 teaspoons olive oil
2 teaspoons lime juice
Garlic powder, pinch
Ground cumin, pinch
Chilli powder, pinch or to taste if you like your food spicy
Salt & pepper
1 small chicken breast
¼ capsicum, sliced thick – red, yellow &/or green
¼ red onion, sliced thick
20g cheese, grated
Chopped coriander, coarsely chopped
Pre-heat the oven to 180 degrees. Mix the olive oil, lime juice, chilli powder, garlic powder, ground cumin, salt & pepper in a bowl. Place the chicken breast in the bowl & completely cover with the marinade mixture. Cover bowl with foil or plastic wrap & leave to marinate for 20 minutes.
Remove the chicken from the bowl after 20 minutes & place on a square of aluminium foil large enough to fold & encase the breast. Slice the chicken so that it has cuts ¾ way through the breast that you can place the sliced veg into. You can place a chopstick either side of the chicken & cut down until you touch the chopsticks if you want to ensure you don’t cut all the way through the breast. Push the sliced veg into the cuts & sprinkle with cheese. Wrap the breast in foil (like a parcel) & bake in the oven for 20 minutes. Remove from oven, unwrap & plate. Sprinkle with coriander & serve with steamed green vegetables or a side salad.
