1 slice of wholemeal or multigrain toast
30g Smashed avocado
60g smoked salmon – Tasmanian of course
1 medium soft poached egg
Bring water to boil in saucepan. Turn down to a tremor & add vinegar. Crack the egg into a cup & gently pour the egg into the water. Let it poach for a couple of minutes them remove the egg with a slotted spoon. Drain the egg on paper towel. Spread toast with smashed avocado & layer the salmon. Place the egg on top, and season with salt & pepper & serve.
